“I have always longed to have a Molteni from Electrolux.”

So says celebrity chef Mattias Dahlgren, who is the namesake, CEO and creative leader of Restaurant Mathias Dahlgren, the newly opened à la carte restaurant in Stockholm’s exclusive Grand Hotel. And in this venue, a Molteni is what he got.

The restaurant, which opened in May 2007, was meticulously designed by British Designer and Creative Director Ilse Crawford. It serves only the very best of Swedish cuisine. A new menu is presented on a daily basis, offering customers the very best in fresh local ingredients and products of the day.

Electrolux in the kitchen
In the kitchen, the equipment is almost exclusively from Electrolux Professional, including air-o-steam® ovens, Electrolux Therma Classic® hobs, dishwashers, and refrigerators. And in the main kitchen is the piece de la resistance: a Molteni Rotisserie. Each Molteni stove is a hand-crafted masterpieces made at a small factory in France. The Molteni line is manufactured by the Electrolux Group.

“I have always longed to have a Molteni, it is joyous place to cook food on, and furthermore it makes a visual impact,” says Dahlgren.

“Throughout the years, I’ve always had a good working relationship with Electrolux Professional,” explains Dahlgren. “If you reach that sort of mutual understanding, there is no need to change partners,” he says, adding that he has always been very satisfied with Electrolux equipment through the years.

Functionality was the keyword in the development of the entire cooking facility, where standard equipment has been custom-modified to perfection for this particular kitchen.

The natural cuisine
“With a Swedish identity on a regional platform, I create my new cuisine open for local as well as global ingredients and influences, a cuisine based on natural produce and natural taste – the natural cuisine,” says Dahlgren.

The restaurant only serves water from its own tap, which has been filtered by the restaurant’s own purification system.

“In recent years we have seen an explosion of imported bottled water in the market, while we have the best water out of the tap, so why not use it instead?” says Dahlgren.

Restaurant Mattias Dahlgrens is geared toward anyone who wishes to experience an exclusive natural culinary experience in a glamorous setting.
