Sautéed Asparagus with Tangy Lentils & Halloumi
serves 4, as a starter or side dish
1/2 cup beluga/puy lentils, uncooked
1 cube vegetable bouillon
water, to cover
one big handful fresh parsley
one small handful fresh mint
1/2 lemon, juice🍋
1 1/2 tbsp balsamic vinegar
1/2 tbsp honey🍯
salt & pepper
250 g asparagus
200 g halloumi
salt & pepper
honey, to serve
Rinse the lentils and place in a small sauce pan along with the bouillon. Fill up with water. Cook for roughly 15-20 min, or until soft but with a slight bite. Drain and let cool slightly.
Chop parsley and mint and add to the lentils. Also add lemon juice, balsamic vinegar, honey, salt & pepper. Stir to combine. Set aside.
Cut the ends off the asparagus. Heat a little butter to a skillet, then gently fry the asaparagus until browned and softened.
Also slice halloumi and cook in a little oil or butter until browned.
Arrange 4-5 asaparaguses on serving plates, top with lentil salad and a few pieces of halloumi. Drizzle with a little honey on top. OR arrange it all on a big sharing plate. Enjoy warm 😊

🌮Sweet Potato Tortilla recipe coming up!
makes about 7
3 sweet potatoes🍠
4-5 dl / 1 2/3 cup – 2 cups spelt flour
1 tsp salt
400 g cooked black #beans
~250 g canned or frozen #corn
2 ripe #avocados 🥑
2 stalks scallion
2 handfuls of #cilantro
~15 small cherry tomatoes
1 #lime, juice
1 clove garlic
salt & pepper
pickled red onion
Set oven to 200’C/390’F. Prick holes into the potatoes and roast for 45 min-1 hour or until completely cooked through. Let cool a bit.
Rougly chop avocado and tomatoes. Slice scallion and mince garlic. Place in a bowl and add cilantro, lime juice, chiliflakes, s&p. Give it a quick mix with the immersion blender, until you have a chunky salsa. Set aside.
Remove skin from potatoes and place in a bowl. Mash them together with the salt. Add the spelt flour, little by little, and work it in. Use your hands or a spatula. When you have a workable dough, divide it into 7-8 pieces. On a floured surface, roll out to ~3mm thin tortilla breads. Add more flour as needed.
Toast the tortilla bread in a dry, hot pan on both sides until it’s got a bit of color. Place under a clean kitchen towel and spray with a little water. Repeat with the rest of the dough, removing any excess flour in the pan between rounds.
Serve the warm tortillas with chunky #guacamole, black beans, corn (preferably sautéed until browned!), pickled red onion, cilantro and lime juice (the filling is enough for about 4 tacos) 🌮 🌮 🌮

Everyone’s favorite dish –Guacamole!🥑 There are probably as many recipes for #guac out there as there are avocados growing on trees. Here’s ours anyway. Because you can never have enough #guacamole🥑. This is how you do it:
2 ripe #avocados

4 sweet potatoes🍠
150 g #feta cheese
2 dl / 3/4 cup + 1 tbsp sour cream of choice (we used oat-based)
1/2 red onion
1 1/2 tbsp seaweed caviar
1-2 tbsp mini #capers
1 tbsp #dill
1 lemon🍋, zest + juice from 1/4
salt & pepper
chopped red onion
Set oven to 200’C/390’F. Pick holes in the sweet potatoes, then place on a baking tray and roast for 45 min – 1 hour, or until completely soft all the way through.
Meanwhile, finely chop the onion, crumble the feta cheese and combine with the rest of the ingredients. Discard the lemon juice if you’re using dairy sour cream. Season to taste with salt & pepper.
Slice the potatoes in half and open up. Stuff with feta mash and decorate with more dill, onion & seaweed caviar. It’s also lovely to serve with green peas, avokado and salad on the side! 🌿For a completely #plantbased recipe, sub feta cheese for mashed chickpeas and about 1 tsp dijon mustard.

Creamiest of creamy, the ultimate consistency🧀💛 Say hello to our updated version of the American comfort food classic, Sweet Potato Mac’n’Cheese.
makes one pan
380 g sweet potato🍠 (~ 2 ones)
1 brown onion
2 cloves garlic
salt & pepper
0,8 dl / 1/3 cup raw #cashew nuts, soaked for 2 hours
5 dl / 2 cups water💧
1 tbsp nutritional yeast
1 tbsp miso paste
1 tbsp balsamic vinegar
1 #lemon, juice🍋
2 tsp sambal oelek
1 tsp dijon mustard
~1/2 tsp salt & pepper ~400 g pasta of choice
50 g #kale
3/4 dl / 1/3 cup almond flour or panko
1/2 tbsp nutritional yeast
0,6 dl / 1/4 cup olive oil
flakey sea salt & pepper
Set oven to 175’C/350’F. Peel and dice sweet potato, onion and garlic. Place on a baking tray, season with oil, s&p and roast for 25 min or until soft. Try placing the garlic underneath the sweet potato/onion.
In a powerful blender (we used our Masterpiece), mix sweet potato, onion and garlic with the rest of the ingredients for the sauce until completely smooth.
Cook the pasta 2 min shy of the instructions, in generously salted water (pro tip!). Save a few tbsp of pasta water when draining. Add pasta to a 12×7 inch oven proof pan.
Add sauce until the pasta is sufficiently covered, leaving good amount of sauce in the bottom. The recipe yields a little more sauce than needed, so save the rest for a rainy day (store in your freezer for instance!). Add chopped kale and fold to combine. Sprinkle with almond flour, nutritional yeast, flakey sea salt & pepper. Give it a good dash of olive oil.
Bake in oven for 15-20 minutes or until gently browned around the edges.
