makes one big jar
6 dl / 2 + 1/4 cup rolled #oats
1.2 dl / 1/2 cup #pumpkinseeds
1 cup #coconut chips
3/4 dl / 1/3 cup sunflower seeds🌻
1.6 dl / 2/3 cup slivered or chopped #almonds
2 tsp #cinnamon
1 tsp ground ginger
1/2 tsp ground #cardamom
3/4 dl / 1/3 cup #coconut oil
0,6 dl / 1/4 cup #honey 🍯 or maple syrup
1/3 tsp vanilla
1/3 tsp salt
2 tbsp #lingonberry powder (cranberry also works)
3 tbsp water
1.2 dl / 1/2 cup #goji berries
2.5 dl / 1 cup freeze dried strawberries🍓
Set oven to 160’C/320’F. Combine all dry ingredients from the first section above. Melt the wet ingredients along with salt and vanilla. Pour over the dry ingredients and stir to combine. Transfer to a baking tray lined with parchment paper and spread out. Toast in oven for about 15-25 minutes or until golden✨ Stir a few times.
Whisk together lingonberry powder and water. Pour over the still warm granola and stir to combine.
Let the #granola cool, then add goji berries and crushed strawberries. Transfer to a pretty glass jar and enjoy with your favorite #plantbased yoghurt or mylk 👌🏼💞 #homemadegranola #breakfast

Brilliant #broccoli.. stems🥦 Yes, you heard us correctly, broccoli stems! Despite being perfectly edible, surprisingly mild and sweet, this part of the veggie is so very often thrown away. We want this to change now!
So slice it up thinly, peel if necessary, mix with the rest of the broccoli head, add a dash of this (e.g. #oliveoil #lemon #chili) and a dash of that (e.g. #garlic #parmesan #seasalt) and roast in your oven on 225’C/425’F. 8-10 mins is all you need. Nicely charred and crispy is the result you’re going for.
If roasting feels a little bit extensive for today then cut up the whole broccoli, toss it in a soup and give your immersion blender a go. Two posts back you have a #delish recipe for this that we highly recommend👉

Creamy Broccoli & #Kale Soup
Ca 15 cm / 6 inches leek
3 cloves garlic
1/3 red #chili 🌶
oil to fry in
500 g fresh #broccoli (☝️use the stem too!)
750-1000 ml water
1 cube of vegetable bouillon
6 large kale leaves, stems removed
1 1/2 dl / 2/3 cup full fat sour cream
1/2-3/4 small lemon, juice 🍋
1 tbsp white balsamic vinegar
salt & pepper
Chop leek and broccoli🔪🥒. Mince garlic and chili. In a big sauce pan, gently heat oil. Fry leek on medium heat until translucent. Add garlic and chili and cook for 1-2 min.
Add broccoli, bouillon and water so that it barely covers. Let simmer for ~15 min or until cooked through. Add kale and cook for another 5 min.
Remove from heat and mix with an immersion blender until smooth. We used our Masterpiece Immersion Blender.
Put back on the stove, lower heat and add sour cream, lemon juice & vinegar. Season to taste with nutmeg, salt & pepper. For more heat, add dried chili flakes. Serve with black quinoa, fresh thyme and a drizzle of #oliveoil 😋

Celebrate the #NewYear in a #plantpowered fashion with Miso Mushrooms and Creamy Carrot Pappardelle!
8 large carrots
1 large #zucchini
1 tsp salt
1 tbsp #tamari
1/2 tbsp rice vinegar
1/2 tbsp agave syrup
1/2 tsp #miso
For the sauce, see our previous post, Red Pepper Sauce.
Spiralize zucchini and place in a bowl. Salt and let sit for about 15 min.
Chop shallot and portobello. Fry shallot gently, then on medium heat add mushrooms. When browned add the mixed miso marinade.
Create ribbons of #carrot ‘pappardelle’ using a peeler. Steam for 5-8 mins or until softened, using a steam oven or a strainer above a pot of boiling water.
Gently heat red pepper sauce. Squeeze out water from zucchini, place in sauce along with carrots. Serve in #bowls, top with miso mushrooms and fresh thyme.

Creamy Red Pepper and Cashew Sauce🌶
3 sweet pointed peppers (red)
2 cloves garlic
1,8 dl (3/4 cup) raw unsalted cashews
1,5 dl (2/3 cup) water
3 tbsp lemon juice
1 tbsp white balsamic vinegar
1 1/2 tbsp chopped fresh thyme
~3/4-1 tsp salt
pinch of chili flakes/powder
(oil to fry in)
(fresh thyme, to serve)
Set oven to 200’C/390’F. Chop peppers and place on a baking tray. Drizzle with #oliveoil, salt and pepper, and roast until completely soft and browned. When about 10 min left, add 2 peeled garlic cloves to the tray.
In a powerful (and preferably tilted) blender, mix all ingredients, including the roasted peppers and garlic. The sauce is done when completely smooth. Season after taste and serve with your favorite #pasta. Yum!

Apple Chutney 🍎
makes one jar
1/2 kg apples
1/2 red red onion
1/2 small red chili
1 tsp #cinnamon
1 tsp #garammasala
1/4 tsp ground allspice
1 dl apple cider vinegar
1 dl raw sugar
pinch of salt
~1 tbsp cooking oil
Peel and chop apples. Finely chop onion and #chili. Heat the oil in a sauce pan, lower heat and gently fry the onion until translucent. Add the chili and spices and cook for another minute. Then add apples, #sugar and vinegar. Let simmer while occasionally stirring until completely soft and mushy. It takes about 30 min. Let cool slightly, then transfer to a clean glass jar. The chutney lasts for at least 2 weeks in the fridge but make sure to use a clean spoon when you scoop it up🥄
Serve this deliciousness with anything from #curry and #stirfry to neatballs, fancy #cheese or whatever else that needs a ’lil kick!
Happy #Holidays! Let’s celebrate with this classic Swedish recipe – Creamy Rice Porridge. Here topped with some beautifully baked Christmas Apples🍎
1 cup arborio rice
2 cups water
~2-2 1/2 cup milk
1 tbsp butter
1 #cinnamon stick
~1 tsp salt
Baked #Christmas Apples
3 large or 5 small #apples, sliced
4 tbsp maple syrup
1 tbsp orange juice
zest from 1/3 orange
3/4 tsp cinnamon
1/2 tsp freshly ground cardamom
1/2 tsp dried #ginger
1/5 tsp ground cloves
pinch of #vanilla
tiny pinch of #saffron
pinch of salt
Set oven to 200’C/390’F. Rinse the rice thoroughly. Place in a big saucepan with water, butter and salt. Bring to boil, then lower heat and let simmer for about 10 min.
Meanwhile, slice apples and whisk together all the spices, maple syrup and orange juice. Layer apples slices in an ovenproof dish and pour the syrup on top. Use your hands to combine everything. Bake in oven for about 25-30 min.
Back to the porridge. Add 2 cups milk and a cinnamon stick. Let simmer on very low heat while occasionally stirring. When the milk has cooked in, taste and see if you need to add more and let it cook further. It should be creamy yet still have some texture to it. This takes about 30-40 min.
Serve porridge in a #bowl with the warm, spiced apples, sprinkle of coconut #sugar and a splash of milk. 🌟All of this can be prepared in advance and then reheated! Lastly, make sure to share and enjoy with your near and dear. May your holidays be filled with lots of happiness, peace, love and of course, #delicious food.

Spiced Pea Falafel, for a #plantpowered Holiday table💥
makes about 24
1 1/2 cup dried chickpeas💛(soaked for 24 hrs, in fridge)
1 1/2 cup thawed green #peas
1 onion, chopped
3 garlic cloves
3 tbsp #oliveoil + extra
1 tbsp white balsamic vinegar
2 big handfuls of #parsley 🌿
2 tbsp #tahini
1 tbsp ground cumin
1 tsp ground #coriander 🌱
1 tsp ground allspice
1/2 tsp ground cloves
1 tsp baking powder
~2 tsp salt
Set oven to 225’C/437’F. Drain the soaked #chickpeas and place in a food processor along with the rest of the #falafel ingredients. Mix until you have a somewhat smooth mixture that sticks together.
Line a baking sheet with parchment paper and pour olive oil in a bowl. Add a little oil to your hands, then form falafel balls from about 2 tbsp of #batter. Flatten out slightly and place on the baking sheet. Repeat with the rest of the batter.
Bake in oven for about 15-20 min, preferably on steam program, then flip the falafel over. Bake for another 5 minutes.
